I was wondering if Cloudbase-Init had support for either of the Windows Server Core variants? Any information on this topic would be greatly appreciated.

Yes, Cloudbase-Init works on Windows Server Core 2008 / 2008 R2 / 2012 / 2012 R2 / 2016 / 2019 as well, there’s no difference in installation and behavior compared to the full GUI option.
